3 Meals with Thanksgiving Leftovers!

GROCERIES 

  • Green beans
  • Pecans
  • Eggs
  • Cranberries
  • Turkey
  • Lettuce mix
  • Sweet potatoes

BREAKFAST: SWEET POTATO & GREEN BEAN SKILLET

1 cup green beans, 1 small sweet potato (pre-cooked), 2 fried eggs

Saute mixture for ~5 minutes until cooked with canola oil spray; add Everything but the Bagel seasoning from Trader Joes if desired. Cover with lid if desire to cook eggs through. LUNCH: HARD BOILED EGGS, GREEN BEAN PECAN SALAD, CRANBERRY SAUCE & SWEET POTATO

2 hard boiled eggs, 1 1/2 cups Green bean & pecan salad (saute green beans separately before adding in pecans), 1/2 cup cranberry sauce (in a pot I added 2/3 cup date sugar - from Bob's Red Mill - to 1 cup cranberries & cooked until could be well-mixed), 1 sweet potato, sliced

DINNER: SWEET POTATO & TURKEY SALAD 

2 cups salad greens, 1 cup sauteed green beans, 1 medium sweet potato (pre-cooked), 1 turkey breast (pre-cooked)

Add 1 Tbsp Feta Cheese-style dressing, choose one with 0gm added sugar (I get mine from Trader Joe's!)
