- Smoked salmon
- Goat cheese
- Orange peppers
- Cauliflower rice & broccoli rice
- Note: I generally add Trader Joe's "Everything But the Bagel" seasoning to... everything!!
Ingredients: 1/2 cup lentils; 1/2 cup mirepoix; 1/4 cup vegetable stock (broth); 1 handful arugula
Heat & stir for <10 minutes on medium heat!
Poke Bowl - Fall Style
Ingredients: 1 cup cauliflower rice, 2 ounces smoked salmon, 1 cup arugula, 1 chopped bell pepper
Stir-fry cauliflower rice & arugula with some oil spray; transfer to bowl. Let cool if you prefer. Add salmon and pepper.
1 Skillet Protein Win
Ingredients: 2 eggs, 1 ounce smoked salmon, 1 ounce goat cheese
Fry eggs. Add salmon and cheese for ~2-3 minutes to warm.
Smoked Salmon Salad
Ingredients: 2 cup arugula, 1 ounce goat cheese, 2 ounces smoked salmon, 1 cup broccoli rice, 1 bell pepper chopped
Stir-fry arugula and cauliflower rice. Let cool. Stir in other ingredients on a plate.
