Breakfast, Lunch & Dinner for the week of Nov 19

GROCERIES 

  • Eggs

  • Frozen ahi tuna

  • Lettuce mix

  • Avocado

  • Peanuts

  • Greek yogurt, 0% fat, vanilla flavored

  • Goat cheese


BREAKFAST: AVO & GOAT CHEESE SKILLET

1/2 chopped avocado, 1/4 cup goat cheese, 2 fried eggs

Saute mixture for ~5 minutes until cooked with canola oil spray; add Everything but the Bagel seasoning from Trader Joes if desired. Cover with lid if desire to cook eggs through.   


LUNCH: HARD BOILED EGGS, SALAD, PEANUTS & YOGURT

2 hard boiled eggs, 1 1/2 cups salad without tuna (from DINNER), 1/4 cup peanuts, 1 single-serving Greek yogurt  


DINNER: AVO & AHI SALAD 

2 cups salad greens, 1/2 avocado sliced, 1 4oz-piece ahi tuna (I baked it at 400 degrees for 20 minutes), 1 Tbsp peanuts, 1 Tbsp goat cheese pieces 

Add 2 Tbsp Feta Cheese-style dressing, choose one with 0gm added sugar (I get mine from Trader Joe's!)
